In Bazalia krijgen groenten een primaire rol toebedeeld in een Italiaans repertoire aan gerechten. Champignons geven samen met wintertruffel en pecorinokaas kracht en verfijning aan beetgare linguine. Bij een zacht gekonfijte fazantenbout zorgen knolselder en aardappelgnocchi verrijkt met salie voor smaakrijke najaarsaccenten. En dan is er nog een zeer geslaagde sabayon met marsala om de laatste gaatjes subtiel te vullen.
