Bij Asti staat de Italiaanse culinaire traditie centraal: kalfslever op Venetiaanse wijze, gestoofde ossobuco zoals vroeger, kalfslapjes valdostana met basilicum en regionaal wild in het seizoen. De service, verzorgd maar soms wat theatraal, zet de magie van dit tijdloze restaurant verder. Net zoals in de tijd van Dora, wiens ziel nog steeds rondwaart, en elegantie, vrijgevigheid en liefde voor het vak onveranderd zijn gebleven.
