In het centrum van Wetteren serveert chef Freek De Roo een vast menu gebaseerd op seizoensproducten uit de regio. Als hapje brioche met tartaar van tonijn, geraspte chocolade en zeste van limoen. Daarna carpaccio van coquille met crème van avocado, ponzu-limoendressing, krokante croutons en een vleugje pit van jalapeño. Ook de bosduif, met crème van hart en lever en opgefrist met olie van peterselie, weet te overtuigen. Dat levert een hogere score en twee koksmutsen op.
